BACON WRAPPED Venison STEAK BITES w/JALAPENO & CREAM CHEESE
By Pat Kolbe, BUCK FEVER OUTDOORS
An all-time classic, but one that always impresses whether it's an hor’s d'oeuvre for a party, or featured as the main portion of a dinner meal! Venison steak that stays juicy inside the wrapped bacon, with warm cream cheese and a small-bite from the jalapenos. Flavor explosion in your mouth!
INGREDIENTS
Venison Steak, cut into 2” chunks
1 package of Bacon
1 package of Cream Cheese
1 cup of pickled Jalapenos (I use homemade candied sweet & hot jalapenos)
Tooth picks, soaked in water (optional)
COOKING INSTRUCTIONS
Preheat your grill to 350-375 degrees
Lay down a piece of bacon and place an individual steak chunk in the middle
Add a small slice of cream cheese, about the size of the piece of steak
Add 1-2 jalapenos and press them into the cream cheese
Fold and wrap the bacon over the top so it layers over itself and stick with a toothpick to hold all ingredients together
Place on a hot grill, monitoring and flipping each piece to avoid flame-ups. When the bacon is done, they are ready to take off. Let rest for a few minutes (if you can) before serving!
VARIATIONS/NOTES:
If you don’t like hot - trade the jalapenos for just a standard fresh green or red pepper. You’ll still get a nice extra flavor minus the heat!
Soaking the toothpicks in water just helps avoid the toothpick starting on fire or burning.
