 VENISON PHILLY BISCUIT BAKE

By Pat Kolbe, BUCK FEVER OUTDOORS

If there is one venison recipe that we’ve made the most in my household, it is this Venison Philly Biscuit Bake. It is at a minimum, a monthly staple, and at times we make it more often than that! This recipe is sophisticated in that it has many layers, yet easy, and provides the deliciousness and comfort like any traditional casserole type dish!

The gooey goodness and flavors of the venison mixture, peppers and onions, and melted cheese, topped with a buttery biscuit is hard to resist!

This recipe has been shared with family and friends, cooked at deer camp, and heats up just as good as a leftover. It has gotten rave reviews every time I’ve made it. Give it a try and you soon might find it in your rotation of favorite meals too!

INGREDIENTS

  • 1 medium Green Pepper sliced

  • 1 medium Yellow Pepper sliced

  • 1 medium Red Pepper sliced

  • 1 medium Onion sliced

  • 1 can of Cream of Mushroom Soup

  • 1 ¼ to 1 ½ lbs of Ground Venison

  • 1 Can of Jumbo Flakey Butter Biscuits

  • 8 or more slices of your favorite cheese

  • Olive Oil and Cooking Spray

  • Seasoning Salt, Black Pepper and Garlic Powder (use amounts to preferred taste)

COOKING INSTRUCTIONS

  • Preheat oven to 350 degrees.

  • Spray 9x13 glass pan with non-stick cooking spray.

  • Heat olive oil in a cooking pan. Add sliced peppers and onions. Cook to a minimum of translucent onions - I like a bit of char or browning on the onions. Season to your preference.

  • At the same time in a separate pan, fry ground venison, adding seasoning salt, black pepper, and garlic powder to your taste.

    • When venison is browned, add can of mushroom soup. Disperse evenly and let it heat to form a creamy mixture.

  • Layer your 9x13 glass pan with venison mixture first, followed by layer of the peppers and onions. Next add 8 or more slices of your favorite cheese (I love using pepperjack). Finally flatten biscuits with your hands and place on top of the cheese layer.

  • Bake for 30-35 minutes or until biscuits are golden brown.

VARIATIONS/NOTES:

  • I personally like to add a can of sliced mushrooms to the recipe but usually don’t include them if my kids are eating it.
